Yerba Mate
Most methods have a couple of things in common; the gourd, or mate, is nearly filled with the yerba and hot water. The temperature of the water may vary between 160 and 180 degrees F. It should never be boiling.
 
The mate is first filled ½ to ¾ full with yerba. Then it is turned upside down, covering the hole with your hand, and shaken briefly. This causes the particles to properly settle so that the bombilla will not stop up.
 
Next slowly turn the mate to its normal position. Pause when the mate is at a slight tilt. The goal is for the yerba to be at one side of mate, leaving a cavity between the yerba and the opposite side of the mate to place the bombia.
 
Now add a small amount of cold to lukewarm water to wet the leaves and let it sit until the water is absorbed. Then fill the mate with hot water until it nearly reaches the top. If necessary it can be held slightly tilted in order to keep the yerba on one side. Sip slowly and add more water as needed.

Do not allow the water to sit in the mate for a long period of time, it will get very strong.

The name Yerba signifies this as an herb of excellence. “Mate” refers to the vessel in which the herb was once brewed and is derived from the quicha word “mati” or traditional gourd. In the ancient manner, the brewed tea was sipped through a straw of silver that was fitted with a strainer on the end. The brewing vessel was passed round the table in a friendly manner with everyone drinking from the same straw. It was insulting to the group if you refused! Like many teas, this brew is traditionally flavored with lemon or sugar, except the sugar is caramelized or burnt before being added.
