Rooibos and Honeybush
1. Bring fresh cold water to a temp of 180F.

2. Warm your teapot with several ounces of hot water for about 30 seconds and then empty.

3. Add 1 1/2 tsp. of tea for each 6 - 8 oz. cup you are making (depending upon how strong of a cup you like). Since different teas have widely varying leaf size, it is important to adjust the amount of dry leaves accordingly. With lighter weight teas use more, with tightly rolled leaves use less.

4. Rinse the leaves. Pour water over the leaves and allow to set just a few seconds. Pour the tea out.

5. Fill your pot again with water. Cover and let steep for 5 to 7 minutes. The time it takes for tea to brew depends on the leaf size. The smaller or more delicate the leaf, the faster the tea infuses.

Until familiar with a particular tea, steep for a minute or two, then taste. Pay attention to the taste rather than the color.

Rooibos is caffeine free, rich in naturally occurring trace elements, and contains healthy amounts of Iron, Magnesium, Potassium, Fluoride, Manganese, Zinc, Calcium, and Vitamin C. It also contains fair amounts of alpha-hydroxy acid, which is known to promote healthy skin. It also has over 50 times more active in anti-oxidant properties then green tea! This is good news for a lot of green tea drinkers especially because of the low price of Rooibos. It makes a wonderful economical alternative.




Honeybush is a South African herb similar to, but a little sweeter than, Rooibos in appearance and taste. It is a naturally mellow and sweet tea that is high in antioxidants and contains nutrients like Vitamin C, potassium and calcium. Consumed for centuries by the indigenous people, this calming herb reputedly increases appetite. The flowers in bloom give off a pleasant honey perfume, hence the name.

Orleans' French Quarter? From Voodoo to jazz and Burlesque to Mardi Gras, Bourbon is the street where anything can, and does, happen. It was during a visit that our Master taster came up with the idea for this blend. While perusing the shops of the French Quarter one evening, he caught a whiff of toasty vanilla drifting from an alley. THe smell was so hypnotizing he felt compelled to follow it and soon discovered that it was coming from a small makeshift voodoo shrine someone had constructed. He decided to capture the enticing character he had experienced and blend it with pure, caffine free, South African Rooibos to reflect the African rootsof the voodoo he had stumbled across. The result is an exceptionally smooth herbal tea with mysterious character and subtle notes of fresh vanilla. Enjoy a cup today!

During the latter half of the 20th century, Crème au caramel became as ubiquitous on the restaurant dessert menus of the world as Irish pubs did on street-corners. And there is good reason for this. Crème au caramel is delectable. It is also very simple to make and consists of only milk, eggs, sugar, and sometimes vanilla. As simple as it may be however, crème au caramel has a very complex medium rich flavor profile. (Which makes it as natural as a flavoring for the mellow character of Rooibos!) Someday we hope that food historians will look back on our offering of caffeine free Crème au Caramel Rooibos as an important milestone in the long life cycle of flans, custards and their related culinary cousins. Earl Grey Rooibos

Although Earl Grey is normally associated with England and good strong Ceylon and Chinese teas, this unique variety is closely tied to the South Africa town of Howick. The reason for this is two fold. For one, the Rooibos that forms the base of this blend is grown near the town. The second is that the town is named after Earl Grey himself. In fact, History tells us that Henry George Grey, the 3rd Earl of Grey was also known as British Colonial Secretary Viscount Howick. Howick lent his name to the new town as it was being formed near the Mgeni River in KwaZulu Natal back in the 1800’s. Like all great Earl Grey teas, this tea is flavored with all natural Bergamot oil. Brew yourself a pot and note how well the citrus character engages with the mellow herbal character of the Rooibos. The taste is truly sublime.

Lemon Myrtle is a bushy Queensland rainforest tree. It flowers prolifically with large bunches of small white flowers on the ends of the branches. It’s essential ingredient is Citral, which accounts for over 90% of the plants essential oil, compared to about 3% in lemon oil.

Mild texture & assertive flavor created within the comforting folds of Vanilla and Cocoa Bean pieces anchored in a base of Rooibos. Makes a marvelous dessert all by itself. Research has shown Rooibos contains an unusually high amount of antioxidant flavonoids similar to that in Green Tea. Some unconfirmed studies have determined that antioxidant levels in Rooibos are 50 times higher than those in Green Tea. Besides it’s possible benefit as a heart healthy food, chocolate is known to have extremely high levels of antioxidants called polyphenols and flavonoids—four times as much by weight as green tea. The antioxidants present in tea are thought to account for its anti-cancer properties, and research is underway to determine if similar protective properties are present in chocolate as well. Amaretto Biscotti
 Like most things from Italy, the tale of Amaretto is old and romantic. According to lore, in the year 1525, a church in the town of Saronno hired an artist to decorate their ceiling of with a fresco of the Virgin Mary. Needing a model, the artist hired a widowed innkeeper to stand in for his holy subject.
Once the painting was complete, the young woman was so impressed with her stunning depiction on the chapel roof, she decided to give the painter a token of her appreciation. Having very little money to her name, the widow infused apricot pits in brandy and presented him the bottle. The artist, a true romantic fell in love both with both the brew and the widow, and legend maintains they lived happily ever after.
